Irmo SDA Fellowship Church’s “Irmo Community” ministry organizes free class to teach healthy cooking

Irmo, SC (James Bowers) - Diabetes can be a challenging condition. Keeping blood sugar levels in a certain range requires a carefully planned diet and the avoidance of certain foods. Many who are newly afflicted with diabetes may be unsure as to what foods are okay and what are not for diabetics. Members of the Irmo SDA Fellowship Church have decided to help out by holding a diabetes cooking class at the Quail Valley Shopping Center in Irmo. The event, called “Diabetes Made Simple,” starts at 3:30 p.m. and the class last until 5:30 p.m.

The class will be taught by Darcy Griffin, author of the cookbook Cooking for Diabetes Made Simple. She was inspired to write the book after her then eight-year-old son was diagnosed as a Type I Diabetic in May of 2016. Griffin and volunteers will teach attendees how to make meals with ingredients that do not include excessively sugary foods or ingredients that could produce allergies. According to one of the community church’s member, some of the meals made will be vegan ice cream, hummus, chicken salad, and, cauliflower mashed potatoes. These meals are tasty, nutritious dishes that are perfect for someone with diabetes or even a non-diabetic who wants to make healthier food choices. Those who attend the class may also pick up a free copy of the book while supplies last
