Modern, upscale steakhouse coming to Lexington

Lexington, SC 04/24/2025 - Residents of Lexington will soon experience an elevated dining occasion showcasing expertly aged, hand-cut steaks, sustainably sourced seafood, and house-made pastas, all complemented by a thoughtfully curated wine selection. Ember, a modern, upscale steakhouse, whose development was announced last fall, plans to welcome guests in late May 2025.
Ember is a vision brought to life by industry veterans and local restaurateurs Ryan Jones, Steve Cook, and Joe Walker. Set against the backdrop of warmly lit interiors and artfully presented dishes, the Ember experience centers around the restaurant’s signature wood ember grill, which infuses its premium steaks and seafood with a deep, rich flavor. Additionally, Ember’s cocktail program strikes a perfect balance between timeless classics—crafted with top-tier ingredients—and inventive creations that embrace modern techniques and trends.
At the heart of the restaurant sits a striking wine cellar, a true centerpiece, offering an impressive selection of wines by the glass where guests can enjoy premium pours of bubbly Champagne and rich Napa Valley Cabernet Sauvignon alongside a vibrant celebration of bold flavors and elevated culinary craft.
“We believe a steakhouse should be more than just a meal — it should be an experience,” says Cook. “We are honoring tradition while embracing innovation, with seasonal ingredients, classic techniques, and a commitment to sourcing with integrity.”
Cook, who was recently recognized by South Carolina Restaurant & Lodging Association as Restaurateur of the Year, is also owner of Saluda’s, Il Bucato Pizza and Arroyo Tacos & Tequila in Columbia, while Walker, a U.S. Army combat veteran, is an experienced multi-unit developer and operator with brands such as Chicken Salad Chick, Marco’s Pizza, Molto Vino and Scooter’s Coffee. Jones, former general manager of Hall’s Chophouse in Columbia and South Carolina Restaurant & Lodging Association’s 2023 Restaurant Manager of the Year, is a resident of Lexington and serves as Managing Partner for Ember.
Both Cook and Walker are also members of the leadership team for The Foundry Group, a Columbia, South Carolina based restaurant development and management company, which houses the steakhouse under its portfolio Now in the final stages of its transformative renovation with Boyer Construction, the Ember space, designed by 1X1 Design, Inc., combines moody and warm elements with pops of mixed metals, creating an upscale yet comfortable atmosphere that balances sophistication and comfort. The restaurant also offers a selection of private and semi-private dining options, perfect for corporate gatherings, rehearsal dinners, celebrations, and more.
